Ingredients:

☐ Grapeseed oil as needed
☐ 6 zucchinis
Directions:
Preheat your Air Fryer to 330 degrees F Wash zucchini, slice zucchini into thin strips Put slices in a bowl and add oil, salt, and toss Spread over the cooking basket, fry for 12-15 minutes Serve and enjoy!

☐ 1 spaghetti squash, cut half, lengthwise
☐ 1 and 1/2 tablespoons olive oil
☐ 1 garlic clove, minced
☐ 1 small zucchini, chopped
☐ 6 tomatoes, diced
☐ 1 cup chickpeas, cooked
☐ 1/2 teaspoon oregano
☐ 1/2 teaspoon salt
☐ 1 cup basil, torn
☐ 1/2 teaspoon zest, lemon
Directions:
Preheat your Air Fryer to 350 degrees F Rub 1 tablespoon olive oil on each end of spaghetti squash halves, press them down on the cooking basket Cook for 20-30 minutes Take a skillet and add remaining 1/2 tablespoon olive oil, add garlic, tomato, zucchini Cook for 8 minutes Add chickpeas, oregano, cook for 3-4 minutes and season Remove squash from fryer and use a fork to stroke lengthwise and separate the flesh Add veggies, chickpea mix, and stir Top with basil, drizzle olive oil and zest Enjoy!
